I just finished another 7.25 mile run in 1 hour and 5 minutes. Woohoo! That’s the farthest I have gone. EVER. My little mini is going to be pumped about that one for a few days! I was in need of carbs after that fabulous run.
And the carb of choice was mac and cheese. I love it! It’s so easy, and you can throw in any veggies you have in the fridge and make a meal out of it. Tonight I made Annie’s Homegrown – Organic Whole Wheat Shells & White Cheddar with some broccoli, cauliflower and green beans mixed in. Healthy and tasty!

YUM!! You can’t go wrong with shells and cheese and veggies : ) Aaand you’ve made me hungry for it!! haha.
I’ve had these shells and cheese before, but never with veggies. I’ll have to try that next time. Yum!
