This recipe is so simple to make! If you are looking for something to make quick that is full of flavor, this is your meal! All you need is 4 ingredients! It’s pure genius! I was inspired by Angela’s 60 Second Black Bean Dip and Stuffed Peppers.
Ingredients:
- 2 peppers, any color
- 1 can black beans, rinsed and drained
- 1/2 cup tomato/pasta sauce or salsa
- Handful of carrots, chopped
- Crushed black pepper
I had recently received a package from Don Sabrosa with a variety of salsas, so I knew this would be the perfect meal to try the salsa’s with! I went with the Natural Gourmet Salsa – Roasted Garlic Mild flavor. The second I opened the can I could smell all the fabulous ingredients. It was so yummy! I love me some salsa!
All you do is put all the ingredients (except for the peppers) into the food processor, and away you go! I processed mine for about 20 seconds. I liked to keep some chunky bits in the dip, but that’s my own personal preference.
I love my little food processor! It is so fabulous and petite and perfect for making dips (and ice cream!)
How yummy does that look?
I then sliced the peppers and filled it up with the dip! It’s that easy! I myself am an avid cheese lover, so I topped the stuffed peppers with some cheese and into the oven it went! 350F for about 25 minutes! I pretty much just judged mine by when the cheese was all melted!
Nutritious AND Delicious! Yumm!

I also am USUALLY a serious sour cream fan. I know its not the best in the whole world for me, but I like the cool creamy taste with any Mexican inspired dish. Tonight with my meal, I decided to try a new trick > instead of sour cream, use plain yogurt! Worked like a charm!
Post dinner boyf and I finished watching Season 1 of True Blood on Netflix. I love that show! We have to catch up with season 2 now. Luckily it’s OnDemand, so we can watch it whenever we feel like. I heart True Blood! We watched the movie and enjoyed a glass of pinot
Last (and BEST) part about the bean dip before I forget: LEFTOVERS!! I got a while Tupperware container filled with fabulous dip! I love it! Lunch tomorrow – check!

I'm so glad you enjoyed them!! I LOVE that mixture. It is so great for wraps, crackers/dipping…heating and putting over rice…etc
