Chocolate-PB-Coconut-Sugar Cookies

Subtitle for this post: “What I Made While Watching The Biggest Loser”

I know Angela was saying how this show makes her do pushups while watching. Is it bad it makes me bake and want to eat sweets?? Either way, that’s the reality of the situation. I was baking up a storm last night! It started with a hankering for cake after dinner. I went through the pantry and alas there was no cake mix to be found, but I did find this little gem: Betty Crocker’s PB Cookie Mix.


I made the mix, threw in some chocolate chips, coconut and some M&M’s for good measure. I wasn’t messing around with these cookies!

DSC_0096I put everything in the oven to bake and then I was even further inspired!

I saw this recipe floating around the blog world a while ago and remembered it when the cookies were in the oven, and I started throwing some more ingredients together. I decided to make the coating for the cookies!

Coating: 1 cup semisweet chocolate chips (6 oz), 1/4 cup butter or margarine, 1/4 cup peanut butter and 1 teaspoon vanilla

I mixed all the above ingredients in a bowl, and put it in the microwave for 30 second spurts until everything was all melted. For the vanilla I used Singing Dog, and for the Peanut Butter I used Crazy Richards. That PB is amazing, but more on that later.


After the cookies came out of the oven, I let them cool for a while.

Then it was time to add the coating. I used a spatula to spread it out evenly on each cookie. YUM!


THEN I threw the cookies in a bag with powdered sugar. Love the recipe Chandra! This gave the cookies another layer of goodness! It was a little bit messy, and a lot yummy!

These cookies are amazing. They are a fabulous treat. There were some things I substituted for a little healthier aspect to the recipe (e.g. the butter) and other’s I didn’t (e.g. the chocolate!), but they turned out so very tasty! There are always little tweaks you can make to recipes to save some calories.


I haven’t had powdered sugar since I was a kid. It was a great addition to the cookie.

Seriously, it doesn’t get any better than that! DSC_0110  Any other Biggest Loser fans out there? What did you think of the season opener tonight? I thought it was fabulous! I honestly didn’t even know it was tonight until I heard a commercial on the radio this morning. I didn’t feel they promoted it too much this year! I do love that Jillian and Bob are both training everyone. Should make things interesting. I am going to look forward to Tuesday nights from now on! So pumped its back on!

    Haha, that's too funny you made those cookies while watching the biggest loser. They look delicious, though! Love the coconut and M&Ms. I used to watch the biggest loser but i got turned off by the product placement. I don't have a TV now, but if they put it online I'll watch it when I've got time 🙂 Glad to hear it was good!

    I love the new season of Biggest Loser but felt like I already knew what was going to happen due to all the promotional pieces.

    Oh yummy! Those cookies look amazing! I didn't even know Biggest Loser was on until Monday evening. I like how the trainers are training everyone. Last year's drama about having to change trainers was too much for me.

    oh wow powdered sugar is a GREAT idea! it kind of makes me think of a donut, so the cookie inside is a lil unexpected! YAY TBL!!!!

    As for Biggest Loser… I watched a bit of it last night. I was kind of shocked at how much MEANER Jillian and Bob were to the contestants. Lots of cursing and yelling in the face…

    too funny, TBL is definitely a show that I just love to workout while watching and it will keep me away from treats because I feel this weird guilt!
