Apparently, I have made the past 2 days an ode to Angela over at Oh She Glows! I made two of her recipes yesterday, and I made another one tonight! She has some great ideas, and I love trying to replicate all the fabulous things she comes up with! Tonight my meal was inspired by Angela’s Vegan Zucchini Boats.
Step 1: Slice the zucchini’s in half and carve the inside out
I had a difficult time with this! ha-ha! I was using a spoon and trying to slice bits out with a knife. I made it work, but any suggestions on how to do this better are welcome! Check out Jackson, my little helper!
Step 2: You can use ground beef or turkey or whatever you want/have in this meal. I used Lightlife’s Smart Ground. Lightlife was nice enough to send me some coupons to try out some of their products, and I have been having such a good time testing out new things! I love the love fat protein crumbles.
From the box: Ingredients
Made from water, soy protein concentrate, wheat gluten, soy sauce (water, soybeans, wheat, salt), natural flavors (from vegetable sources), contains 2% or less of evaporated cane juice, chicory fiber (inulin), molasses, garlic, barley, malt extract, salt, wheat starch. CONTAINS: Soy, Wheat
Step 3: Mix equal parts salsa with the meat of your choice. I used my Don Sabrosa Mild Salsa.
All mixed together now.
Step 4: Stuff the zucchini!
Step 5: Cheese! Toss some on top! The bake for 25 minutes at 350 or until the cheese melts on top!
Next time I think I could have added more cheese, but it was a great healthy meal! I also used more plain yogurt as a sour cream substitute (like I did yesterday), and it was yummy as ever! Boyf enjoyed it too! Another great recipe Angela! Thanks!
I enjoyed my stuffed zucchini with a glass of pinot. It was delightful.
What a perfect way to start this holiday weekend! What are everyone’s plans? Boyf and I don’t really have anything planned, I think we are just going to relax and hang out. I am looking forward to every second of it! Have a great weekend!

Yumm and Super Yummm! I have so many zucchini and needed soemthing new- THANK YOU!!! Looks great. I feel like the old woman who lived in a shoe, but instead of children I have zucchini!!!

Hey L – My mom LOVES making stuffed zucchini. She always nukes it for a few seconds (i think, i can verify the time) to make the cutting and carving out easier. Try that next time to soften it up. 😉 (p.s. we are poolin it today. you should join us if possible. my friends kim and jacqui are coming by too. but i know it a drive)
