Sweet Potato Fries

Good evening bloggies! Sorry I have been a little MIA! Mondays are crazy busy for me and I have just now had a moment to spare for the blog! I can’t believe October is almost over! Where did the Fall go? It totally went by too fast. We don’t even have a pumpkin at our place yet! Need to fix that ASAP!

My running has also been lacking due to my change of schedule and school work (and the cold weather). I am having a rough time motivating myself to go running outside when it is cold and wet! I don’t want to get sick, but I DO have the Philadelphia Half Marathon coming up (in 32 days!!) I got to get my training face back on and suck it up in the cold weather outside! It isn’t going to be any warmer on race day early in the morning!

Anyone else having trouble running in the cold?

Tonight I came home (after a nice treadmill run) and decided to tackle something I have seen all over the blog world, but never attempted to make myself: The Sweet Potato French Fry

I love me some mashed sweet potato, but I was a little unsure about braving the whole French fry realm of the world. It’s not easy to make a nice crunchy French Fry!pics 134

I cleaned and sliced and diced and threw thee slices on the frying pan with some olive oil. I love the warm orange color of sweet potatoes!

After about 10 minutes of moving the fries around on the pan, they were crisping up nicely.   pics 137

The fries turned out pretty good! There were a few that should have been sliced a little more to cook the inside a little better, but the rest were pretty awesome.  I will probably having Sweet Potato Fries (SPF’s) on a weekly (possibly nightly) basis! pics 136

Anyone else ever made SPF’s? Any suggestions or words of wisdom?

    I have never had luck with sweet potato fries… Though everyone else's come out great. I have heard that sponging them with a paper towel to remove all moisture and sprinkling with salt helps.

    I LOVE sweet potato fries! Now I think I'll make some for lunch. 🙂

    And I can't believe the Philly marathon is 32 days away! You may be slacking for the half but I haven't been able to run in the lat 4 weeks and I'm doing the full! 🙁

    The sweet potato fries look so good!

    I don't mind running in the cold once I am out there, however, I hate it that I now have to run in the dark.

    I am excited to try out the bars and read the book!

    I HATE running in the cold – but right now its too dark in the morning and too dark in the evenings so I'm doing my running inside a warm gym on the treadmill 🙂 it works. I'd love to be able to give up my gym membership, but living in Northern VA doesn't allow that because so many months out of the year are not runnable due to subzero temps and ice and snow

    I posted my SP fries on Sunday.. I bake mine.. I put the oven on 450 and lay the fries flat.. I spray the top with a lil pam and add a tiny bit of brown sugar, I also add two cloves in the pan.. I bake on one side for 15 minutes and then turn them over and bake on the other side for 15 minutes.. They are perfect amount of mushy and krispy!

    Never tried sweet 'tater fries but I have seen "cheetahs" all over blogworld. Same concept I believe, just cut differently.
