Apparently I found out earlier this morning via twitter that today is National Chili Day! If that’s not a call for celebration, I don’t know what is!
Did you know that was today? I love any reason to celebrate chili! It’s one of my all time favorite meals to make. Since it was a snow day for me here in Philly today, I decided to put some chili on the pot this morning. It has been simmering in the crock pot all day! Yum!
I added some Applegate Farms Chicken and Apple sausage to the chili mix. It gave the chili a little something extra!
In this chili mix I also added kidney beans, chickpeas, snap peas, cauliflower, corn, petite diced tomatoes, carrots and peppers. It smelled so great in my apartment all day! Yum!
While the chili was slow cooking away I realized I also wanted some cornbread in my life to celebrate National Chili Day. I decided to remake a version of my homemade donuts, except in the form of cornbread. I made these bad boys with applesauce and cinnamon and they turned out a little thinner than I would have liked, but I made it work!

Jackson was jealous! He wanted some too!
I added some ‘cornbread,’ and topped it off with some cheese and some fat free plain yogurt ( the ultimate sour cream alternative!)
It was the perfect meal to celebrate snow falling on the ground outside as well as National Chili Day!

Hmm…I'm not the winner (wish I was), but the link you posted said that you posted the winner on 12/18/07. Maybe that's why they didn't see it (I never did and I'm a pretty faithful reader).
