I am currently in the process of trying to eat all the produce in my apartment before I leave for Orlando on Thursday! It’s a tough job, but somebody’s got to do it! So expect to see massive amounts of fruits and veggies over the next 2 days. I know if I don’t eat them, they will be bad when I get back on Monday! So eat them, I shall!
I am getting more and more excited for Disney! I purchased 2 park hoppers online last night and I got my free day voucher from the Disney’s Give A Day Get A Day program. The park passes were discounted for the Disney Princess Half Marathon, so that’s always exciting! I can’t wait to see Mickey and Minnie!
Back to the veggies. I am on a mission to finish eating a big bag of spinach in 2 days, so tonight’s dinner had a heaping handful of the glorious green stuff.
I did a little stir fry/casserole combo. In my frying pan I was cooking some of my favorite Applegate Farms sausage – and then added yellow peppers, onions and spinach to the mix to brown.
After everything was browned and read to go, I transferred everything into my beautiful new Dutch oven.

After my stir fry mixture was in the Dutch oven, I added some Dei Fratelli sauce to the mixture.
I also added some regular shredded cheese as well as a good portion of our special cheese from Valentine’s Day! I love good cheese combinations in casseroles.
Into the oven at 350* for about 30 minutes.
It came out all cheesy and delicious.
It was so exciting to use my new Dutch oven for the first time. I swear I thought it was going to explode or melt in the oven, but it held strong and kept the casserole nice and hot!
Its so nice to be able to come home and throw some things together in a pot and create a nice meal.
Is it too early to start carb-loading for the big race?!
