Today I got an early start on lunch! I was very hungry to eat! Last night I stayed up and made a batch of Sweet Potato, Black Bean & Salsa Balls so lunch today was quick and easy! I decided to make a sweet potato balls sandwich!
I made the balls as per the recipe and then squashed them down to make more of a ‘patty’
I then topped it with some peppers and lettuce on an Arnold sandwich thin.
I also topped my sandwich creation with a combination of regular mustard and Saucy Mama mustard.
I also enjoyed my lunch with some ice cold water in my new Lifefactory water bottle that was sent to me to review!
