Training for the Chicago Marathon has been tough, I am not going to lie. Training for the SheRox Tri on top of marathon training has been a welcomed distraction from all that running, but it has definitely added to the challenge.
I have been feeling a little worn out the past week or so and I am hoping that after the tri on Sunday things will calm down a bit.
To give you an idea of the excess of my sleepiness – On Tuesday I had plans to get a 6 miler in. I got dressed when I got home from work to go for a run, sat on the couch and completely passed out.
Girlfriend needs some rest.
After passing out in the middle of the day on my couch I have vowed to make more of an effort to get the right amount of sleep. I want to be sure that as the marathon training continues to increase, I am taking care of my body.
On that note, after I woke up from my little nap I decided that I needed some red velvet cupcakes in my life!
My mom got me this cupcake mix a while ago and I figured now would be the perfect time to make them!
Making cupcakes was also a perfect excuse to open a few engagement presents that we got a few months ago at our engagement party and hadn’t put to use yet!
I was pumped to open up our hand mixer!
And to finally use our new cupcake pan! Woohoo!
Red velvet cupcakes make me very happy.
Cream cheese frosting makes me happy too.
I also used our cooling rack for the first time. I love this thing!
The cupcakes turned out beautifully. I love the color.
I added a really light layer of the frosting.
And what’s a cupcake without some sprinkles?
I am so glad I took some time off from running and got my bake on. I was saving this cupcake box to make for a special occasion, but I am so glad I made them just for fun to enjoy myself.
Maybe I will share one with fiancé.
Maybe…
They kind of look too good to share, don’t you think?
Maybe I should keep them for myself. Carb Loading??
