My love for butternut squash is pretty intense this Fall season. I have been making so many amazing dishes with it lately – I can’t get enough of it!
The other day I was inspired by Beck’s Simple & Sweet dinner that I knew I had to recreate it for myself!
The last time I made risotto, it turned out amazing , so I was excited to make it again!
Making risotto takes a lot of time and love. This is no something you can throw in a pot and come back to in an hour. But if you make it right, you will find that the meal is worth the wait!
I started off by chopping up my squash. I love the orange color! It’s so Fall! It also reminds me of a cantaloupe.
I was nervous and excited to face the risotto again! I had to mentally prepare myself to stand in front of the oven and stir for a while! 🙂
To the pan I added the squash, 1/2 cauliflower 2 cups of brown rice, 1 onion, 1 clove of garlic, 2 tsp. olive oil and 2 cans of veggie stock.
I added the oil first, letting it heat up the pan, then the onion and garlic (I love that cooking smell!) and then the rest of the vegetables.
After the veggies took on some heat, I added some of the vegetable stock and all of the rice. I kept adding bit by bit of the stock as it was absorbed by the veggies and the rice.
Pour, and stir, pour and stir. That’s how I rolled for a while. Eventually the meal goes from looking like the picture above to the picture below. I loved the fact that the butternut melted down adding to the creaminess of the risotto.
It looked cheesy, but it’s all squash!
Here is how I spent the majority of my evening – getting my stir on!
You know its ready when the rice is creamy.
I sprinkled the top of the risotto with some parmesan cheese.
Oh my goodness, this meal was insanely good. It was a fantastic mixture of savory and sweet.
It just tasted so damn good. I heart risotto. It makes me so happy.
What are some other risotto recipes I should make? I want to make them all!
