Stuffed Acorn Squash

I am sort of a newbie to squash. I enjoy eating it, but this is my first squash season making it.

Last week my Cheesy Butternut Squash Casserole turned out amazing, so this week I wanted to see what fund I could have with an Acorn Squash!


I enjoy the green and orange colors of the little acorn squash.

My inspiration for this post was based on this recipe, but just like anything else I make, I like to make each meal creation my own with little changes here and there.

Have I told you lately that I LOVE asking my twitter friends for recipe ideas? They always pull through for me!


Step one – Half the squash

Step Two – Scoop out the squash. I used my awesome melon baller again to help me with this part.


Drizzle a little bit of maple syrup on these bad boys…


Then put them in the oven at 375* for about 40 minutes.


While the squash was toasting away I made the stuffing. This is my little mixture of a variety of different things I always have on hand in the kitchen.

In here you will find – sprouts, green peppers, chick peas, kidney beans, onion and zucchini


Lots of veggies going on!


I then added some tomato sauce and cooked chicken sausage to the mix. Fiancé says I never cook meat so I had to throw some in this meal for him!


While my stuffing was heating up, it was time to take the squash out of the oven.


Into a bowl the squash went.

And into the hole the stuffing went.


This meal was super easy. You really can throw anything and everything you want in the stuffing mixture. Whatever floats your boat!


The syrup sweetened squash was the perfect addition to the meal. I completely ate all my squash! It was delicious!


What are other fun recipes to try with acorn squash? I can’t wait to play around more with this veggie this season and I need some more suggestions on what to make.

    Your meal looks so pretty! Maybe I would add some shredded baked chicken instead of the sausage. I would also use whatever veggies I had in the house – maybe even add some type of pasta.
    Was fiance happy with the meat you added?
