As many of you know, possibly much like the men in your life, fiancé is a meat and potatoes kind of guy. He gets steak and chicken and any form of meat whenever we are our mainly because I hardly ever make it at home.
Even with his love for meat, Fiancé and I have been together a little over 5 years, so he know the majority of my cooking habits.I don’t eat much meat myself and am not the biggest fan of cooking meat, so when I am in charge of dinner, I make what I am comfortable with – veggies!
Veggies are what I know and what I love. I enjoy recreating whole meals out of nothing but veggies. I am sure fiancé and most guys would appreciate a chunk of meat thrown in every now and then, but that’s not how I roll.
Tonight’s meal featured a new tomato sauce – Two Guys Jersey Tomato Sauce. We picked up this little number at the 2010 Philadelphia Food and Wine Festival, I was excited to check it out.
Obviously I had to support the Jersey tomato sauce. I had to represent my two favorite Jersey boys and show some love!
The sauce was paired some some fabulous spaghetti squash. Nothing like cleaning out a whole squash for dinner!
And what goes well with a main course of a baked vegetable? Well more veggies of course!
We enjoyed the squash with a side of steamed broccoli and cauliflower – two of my favorite vegetable combinations. Just like my mom always made for me as a kid! Yum!
Jackson was skeptical of my new food photography location. But I told him since it gets dark so early now, you got to do what you got to do!
Sprinkled with a bit of cheese, and all is right with the world.

I love veggie meals and bought a spaghetti squash to have for dinner after I had it at my mom's recently. I had been craving it for a while too! But, now it has to wait because I have an overload of fresh produce because I forgot about my CSA delivery.
i love veggies! but no, i don't ever do all veggie meals. but i just might start!

That lookd yummy! I never would have thought to put cheese on it, but I bet it's good! I love to make veggies, but usually it's one at a time. I especially like to slice up squash and saute it or make a baked sweet potato with honey…yum.
my parents don't understand how veggies are the center of my meal since they grew up meat and potatoes…but i love it!
