Tonight I crafted my very first batch of broccoli cheddar soup. It was an exciting moment for me. I was inspired by Megan’s creation the other day and it seemed simple enough that I could recreate it myself!
I started off sautéing 1/2 an onion in a pot on the stove in a bit of butter.
Then I added 3 cans of mushroom soup to the onions and then 2 cups of cheese to that and let everything melt and come to a boil.
While the soup was getting its cheese on I steamed some veggies. Would you believe it if I told you this was my first steaming experience? I bought this steamer the other day and had no idea how to use it.
Side Note: I was steaming a few cups of broccoli, cauliflower and some carrots to add to the soup.
Back to my steaming experience – I added some water to the bottom of my Dutch oven and let everything steam, but then I wasn’t sure as to how to take everything out. There was a little metal rod in the middle of the contraption but I was freaking out a bit because I wasn’t sure if it would burn me.
Eventually Fiancé assured me that I would survive removing the steamer.
Out it came. Easy as pie. Or shall we say, easy as broccoli, cheddar, cauliflower soup!
Before adding the veggies to the soup mixture I whisked in 3 cups of milk to the soup to thicken it up a bit. Then I added the broccoli, cauliflower and carrots (oh my!).
I let everything simmer for a bit until it looked a little something like this.
Then I did a little His & Hers cali bowl action.
The soup turned out amazing. It was the perfect amount of creaminess with a little crunch from the steamed veggies.
I really liked this soup because broccoli cheddar soup has a bad rep and isn’t the healthiest option on the menu when you are looking for a soup. But if you make it at home you can substitute some ingredients for healthier choices and make the meal a little leaner!
I did this by adding more veggies, used fat free milk, a healthy butter alternative and fat free cheese. With these little changes, it was a meal that I didn’t have to feel guilty about and it tasted great!
With a side of bread.
Bread for dunking is necessary for any soup creation.
This is only the second soup I have ever made, the first one being a lovely butternut squash creation. I am very happy with how tonight’s dinner turned out. I am quite the soup maker, if I do say so myself! It was a lovely meal for a cold Winter night!

The best soup I've ever made has to be a broccoli and stilton creation which was so rich, creamy and decandent it blew my mind. Secret ingredient? Nutmeg!
Your soup looks amazing! Good to substitute the healthy options too. I've tried to make potato soup before and it turned out like Mashed Potatoes, I have no idea what I did – it tasted good, but boy did my family laugh.
I love broccoli cheddar soup. It has to be one of my favorite soups. I like that this is a healthier way to make the soup. I definitely want to try making this! 🙂
