Fennel, Apple & Lemon Salad

I have been having lots of fun with Fennel lately. I made a potato-fennel gratin casserole when I purchased my first fennel and today I made a Fennel, Apple & Lemon salad!


It was pretty much just as easy as the name sounds – I used one fennel bulb, sliced it thinly, cut up a Granny Smith apple, added a few drops of olive oil, a dash of pepper and some freshly squeezed lemon juice.


Everything looked so pretty all sliced up together.


I love all the crunch this salad combination provides.


And the touch of lemon gives it a little extra zing!


I also believe that pretty lemon slices make any dish look incredible!


This will be a fabulous salad to have in my back pocket for the warm summer months – I think this salad would be great with a little extra hint of citrus – maybe a blood orange or grapefruit addition!
