There is nothing better than soup on a rainy day – and it is currently very rainy in Philadelphia!
I was recently inspired by the lovely Gina of Choosing Raw, so I decided to create her Summer Corn & Coconut Soup myself!
3/4 cup chopped onion
1 small bell pepper, chopped
1 small clove garlic, chopped
1 tsp olive oil
Salt and pepper to taste
1 cup coconut milk
2 cups almond milk, plain
2.5 cups corn, fresh or frozen
2 tsps curry powder
It was a super speedy easy soup to make!
Start by sautéing the onion, pepper and garlic in the oil.
Add the coconut milk, almond milk, curry and the corn, bring to a boil.
And that’s about it! Add it to a cute little bowl and enjoy!
This soup was corny, coconut-y, creamy and delicious!
Doesn’t get any easier (or taster!) than that! It’s also vegan, gluten and soy free!

Taco Soup! Oh – I LOVE THIS STUFF. Your soup looks so delicious! In Louisiana it’s still 110 degrees outside so while I can’t make it anytime soon – it’s definitely on my to-make list for the winter!!!!
I love to make Potato Soup and also Broccoli and Cheese. I need to perfect my recipes a bit, haven’t been able to make a perfect soup yet. Your soup looks so easy!
i just made it and served it over brown rice with grilled spicy shrimp. AMAZING! oh and i added a red pepper too
