Brussels Sprouts are one of my all time favorite vegetables. Now with the 40 days challenge, I have an excuse to eat them everyday! Today I created them with two simple ingredients – olive oil & balsamic – why has no one told me about this combination?! It’s fantastic!
I put the sprouts in my food processor – shaved brussels sprouts are my favorite.
Added a little olive oil and a little balsamic and you are good to go!
My new favorite snack! Yum!

I LOVE Brussels Sprouts simply roasted with olive oil and lemon juice. So delicious and nourishing to the soul. I also love it tandoori style, with greek yogurt and Indian spices. Yummy!!
I love them blanched and then sauteed in some olive oil. Finish off with a bit of lemon juice and salt. I could literally eat an entire batch in one sitting.
I’ve only made brussel sprouts [roasted] once and they were fab! Would love to try them shredded- they remind me of broccoli slaw 🙂
Well I know now what Im doing the ones I have in my fridge!
I seriously need to try brussel sprouts, you make them look so yummy!
