Another dreary, foggy day in Philadelphia calls for one thing & one thing only:
SOUP!
There are so many great soup creations out in the blog wold, its easy to pick something fabulous. Today I was inspired by one of my favorite blogs (ever!) – Iowa Girl Eats. She makes some of the most amazing looking & tasting dishes out there. I have many (seriously, many!) of her tasty dishes saved under my reading lists – tonight her Chicken & Rice Soup were what’s for dinner.
I started out with a lovely blend of carrots, celery & onion (seasoned with a little salt & pepper) mixed with butter & EVOO.
Add in some garlic & cooked chicken.
Side Note: carrots, celery, onions & garlic are the best smelling cooking ingredients in the whole, wide world! I swear Yankee Candle should make it an official scent!
Next up, throw in some chicken broth, milk & bay leaves – Bring to a boil.
Once there is a nice healthy boil situation going on, add in a serving of rice & let simmer away until tender.
Once the rice is good to go within the soup, add in some flour & cheese to thicken that bad boy up!
Let the soup cool & thicken up – serve & enjoy!
I decided there really isn’t a photo in the world to do this soup justice – it’s tasty & delicious! Super full of flavor & very savory.
The hubs said he was pleasantly surprised with this tasty meal.
