What’s for dinner tonight?
Potato Chip Coated Chicken Nuggets inspired by Iowa Girl Eats.
It all begins with a little bag of chips.
I made this dinner for one – using a mini bag of chips & 1 chicken breast.
You need two bowls for coating the chicken. One bowl has a whisked egg & a splash of milk. The second bowl has the mini bag of potato chips all smashed up. Feel free to make the the chip pieces as big or as small as you like!
Dip the chicken in the egg coating & then roll in the chips to coat all the way.
I decided to do little nuggets with the chicken. Thought it would be cute & fun to eat!
Into the oven at 400* for 20 minutes.
While the chicken was cooking I made Brussels sprouts for the side dish. Balsamic Brussels sprouts are usually my favorite but this time I added a bit of EVOO, salt, pepper & garlic gold for some flavor.
And before I knew it – the chicken nuggets were ready to be tasted!
The coating of chips gave the chicken such a great crunch & flavor.
Tasted like a legit chicken nugget, only better {because I made it!}
It was super tasty & delicious.

Combined with a sauce of greek yogurt, yellow mustard, dijon mustard & honey which was perfect for dipping.
Seriously, the secret’s in the sauce.
This meal was pure perfection – and with the endless possibilities of chip flavors to add to the crunch factor, I am excited to make it again soon!

Super easy and looks delish – I need to try this soon! I bet it would be yummy with cajun chips too!
