Fall {to me} means soups, soups & more soups!
Along with fabulous Fall Boots & Cozy Sweaters, duh.
I love trying out new soups & I love even more the fact that I can make meals that my little man loves! This soup has been made THREE times in the past few weeks & it’s been a lunchtime staple for Brooks. He’s obsessed with it and I’m really happy about the fact that he’s getting a nice serving of veggies!
Making this meal in the middle of the day makes my life so much easier in the evening – it’s so simple to throw the butternut squash in the oven to roast for an hour during nap time. It’s like I’m seriously multitasking – prepping dinner while doing other things around the house. Love that.
I love that this recipe includes another one of my fall favorites -> granny smith apples. I love the tart flavor, they might be my favorite apples! It’s so nice to include them in this recipe they definitely give a hint of some unexpected flavor.
I also love the fact that I can use my beloved Vitamix in this soup creation as well.
Using my blender for more than just smoothies makes me very happy – aside from the fact that it does a seriously killer job on making the soup creamy & delicious!
This recipe is easy, delicious, baby friendly and wonderful to make a ton of and store in the freezer for a rainy {lazy?} day. These days, I only really make meals that I can share with my little guy and that make leftovers. This checks both items off that list!
Topped off with some pumpkin seeds and served with a side of crusty bread and you are good to go!
