Slow Cooker Onions, Peppers & Chicken Fajita

As a part of a campaign with The SITS Girls & Minute® Rice I was challenged  to put my own spin on one of their classic recipes. There are so many tasty and delicious Minute® Rice recipes, it was hard to pick a favorite -> BUT given my track record and the fact that I am literally obsessed with my crock pot, I had to go with a slow cooker creation.

Slow Cooker Onions, Peppers & Chicken Fajita

This recipe is so easy – all you have to do is slice the onion and peppers and you are done. That’s literally all the prep work you have to do! It’s the perfect sort of meal for this holiday season because it requires little planning, little prep but it’s a tasty & delicious meal that packs a big punch.

I also love how the veggies come out so tasty and the chicken comes out so moist and flavorful after cooking in the crock pot low & slow.

You’ll Need: 

  • 1 packet of taco seasoning
  • 1 lb. chicken breast
  • 1 medium onion, chopped
  • 2 red peppers, chopped
  • 1 clove garlic, minced
  • salt & pepper, to taste
  • 2 cups Minute ® Rice, uncooked


  1. Slice peppers and onions then place them on the bottom of the crock pot
  2. Put uncooked chicken on top of peppers and onions
  3. Sprinkle taco seasoning on the top
  4. Cook on low for 6-8 hrs (or high for 3-4)
  5. Cook rice as directed on package. Serve chicken mixture over the rice.
  6. Top with sour cream, guacamole, cheese, lettuce, etc.


This meal is great because aside from the taco seasoning, you can season the chicken however you want and really make the recipe your own. And veggies + rice are always a good idea on the dinner table! If I had tortillas, I would have wrapped up the fajitas but I didn’t have any on hand and you honestly don’t need it – but you could go that route as well!
