I wasn’t going to post about this recipe right away but Charles said it’s one of the best things I’ve made {ever!!} and one of his all time favorite meals, so I figured it deserved a little bump to the top of the posting list!
This chili is so easy to throw together and is so different from any other chili recipes I have tried -> check out two of my previous chili favorites on the blog: Green Beef Chili / Sunshine Chili
The chipotle peppers in adobo gives a lovely smokey flavor and the addition of the jalapeño along with the chili powder brings the heat. Literally, I was eating this and my nose was running – it will definitely clear your sinuses, but in an awesome & tasty way! Can’t wait to make this again soon! Yum! What You Need:
- 1 tbsp EVOO
- 1 large onion, chopped
- 5 cloves garlic, minced
- 1 lb ground beef
- 28 oz diced tomatoes
- 15.5 oz kidney beans
- 2 chipotle peppers in adobo, diced
- 1 jalapeño, diced
- 1 stout beer – I used Murphy’s! Yum!
- 1 tsp chili powder
- 1 tbsp brown sugar
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp cumin
- a pinch of salt
How To:
- Sauté onion in EVOO over medium heat for 4-5 minutes, then add the garlic. Sauté 1 minute, followed by the ground beef and cook fully.
- Add the diced tomatoes, kidney beans, diced jalapeño, chipotle peppers and ground beef to a slow cooker set to low. Mix together
- Pour in stout beer in slow cooker & mix.
- In a separate bowl combine chili powder, brown sugar, black pepper, paprika, cumin and salt.
- Stir everything together, cover, and cook on low for 6-8 hours, or on high for 3-4 hours.
Side Note: When given the opportunity & time I ALWAYS cook everything on low for the longer time. Turns out so much better!
Optional: I topped my chili with a little freshly shredded cheese, some sour cream, a little avocado & got my dip on with some chips. It was pure chili perfection!
