Slow Cooker Beef Ragu

I made this last week and posted the final product on Instagram with the promise of a recipe to share & here it is! If you’ve been reading the blog for a while you must know my obsessed with crock pot meals:

Loaded Baked Potato / Rustic Italian Chicken / Mexican Stuffed Bell Peppers / Slow Cooker Lasagna / Potato Soup / Crock Pot BBQ Chicken Sliders / Chipotle Stout Slow Cooker Chili

Prep in the morning {preferably during nap time} and dinner is ready? I love everything about my Slow Cooker – I’m even thinking about upgrading to a larger one.


But back to THIS meal!

Ragu is something I’ve never made before and was a little intimidated by the look {and sound!} of it because it looks so fancy! I love this meal because everything was literally in the crock pot and ready to slow cook after 5 minutes of prep. That’s the way to do a crock pot meal!

This meal also made a ton of leftovers, which is always awesome too. And I don’t know about you, but I love a fresh, warm pasta meal in the winter time! Yum!

How To:

  1. Add 1 large white sliced onion and 4 crushed garlic cloves to the bottom of a slow cooker set to high. Sprinkle the 2 tbsp fresh rosemary on top.
  2. Season 2 lb. beef chuck with salt and pepper {to taste}, then add to the slow cooker over the onions & garlic
  3. In a medium bowl, combine the 2 cups beef broth, 1/4 cup red wine and 6 oz. tomato paste.
  4. Pour the mixture over the beef and add 15 oz. of diced tomatoes to the crock pot.
  5. Cook on high for 6-8 hours.
  6. When the beef is ready you should be able to reach a fork into the crock pot and the beef will pull right apart.
  7. I served it on top of 12 oz. pappardelle pasta {but any egg noodle would be awesome!}
  8. Ladle the sauce from the crock pot over the beef and  pasta.
  9. Top with 1/2 cup fresh grated parmesan cheese.
  10. Serve & Enjoy!

    You have inspired me to use my Crock Pot more – your Ragu looks amazing too!
    I’m obsessed with my FitBit, it works perfectly for me, but your new gadget is intriguing. Can’t wait to hear how you like it and if you feel like it’s a personal coach!
