Egg + Sausage Muffin Cups

I love sharing yummy recipes on the blog. This one my mom made the day after Thanksgiving before we went out shopping on Black Friday and it was so delicious, I had to share with you! This is a quick and easy recipe that would be perfect after Christmas or any day you have guests visiting for the holidays!

How To:

  1. Prepare 12 sausage links according to package directions. cool slightly and cut into 1/2-inch pieces; set aside.
  2. In a bowl, combine 3 cups frozen hash browns, 3 tbsp. melted butter, salt and pepper {to taste}; divide evenly into 12 greased muffin cups. Press mixture onto sides and bottom of muffin cups.
  3. Bake at 400* for 12 minutes or until lightly browned. Remove from oven, divide sausage pieces into muffin cups.
  4. In a bowl, combine 6 Egglands Best eggs, 2 cups shredded Mexican blend cheese and 1/2 cup chopped red bell pepper. Spoon mixture evenly into muffin cups. Sprinkle with chives or onion. Return to oven, bake 13-15 minutes or until set.
  5. Serve & Enjoy!

Anything that combines eggs, cheese and hash browns, add in a little veg is all right in my book. Simple and tasty, doesn’t get much better than that!
