Korean Beef Bowl

You know when you look in your fridge, you find one thing you want to work with but don’t know what do to with it? That was me yesterday. We had some ground beef that I either had to freeze or use and it was time to make a game time decision. With beef I pretty much make the same meals over and over again – chili, tacos, enchiladas, chili again – but it’s been so hot lately, I didn’t want any of those things {not that what I made was any cooler, just wanted to change it up a bit.

I literally googled – What to make for dinner with ground beef – and this recipe from Damn Delicious popped up. Looked simple enough, I had all the ingredients on hand and it was something different – thought I would give it a whirl and I’m so glad I did!

It seriously tastes like Korean BBQ – something I never really thought I could make before, AND {the best part} is that it’s ready in about 15 minutes – which is always a winner for me. I also enjoyed the fact that it didn’t call for many ingredients, and like I said, I already had it all in my pantry. Seriously, wins all around with this one.

Here’s how you make this damn delicious meal:

  1. In a small bowl, whisk together 1/3 cup of packed brown sugar, 1/4 cup soy sauce, 2 tsp. sesame oil, 1/2 tsp. crushed red pepper flakes and 1/4 tsp. ground ginger.
  2. Heat 1 tbsp. vegetable oil in a large skillet over medium high heat. Add 3 cloves minced garlic and cook, stirring constantly, until fragrant, about 1 minute. Add 1 lb. ground beef and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat.
  3. Stir in soy sauce mixture and 2 thinly sliced green onions until well combined, allowing to simmer until heated through, about 2 minutes.
  4. Serve immediately, garnished with more green onion and 1/4 tsp. sesame seeds, if desired.

Pretty easy and so tasty! I will say that if you add more red pepper flakes it will be even better with more heat – mine was a little toned down to share with the littles. Also I used fresh ginger instead of ground and it was even more flavorful and lovely!

Defiantly add this to your dinner rotation to this week!
