Sarasota Vacation Update, My New Favorite Skirt + Avocado Chickpea Sandwich

I’m currently on vacation with the family in sunny Sarasota Florida! It’s our first time here and we are spending a week with our neighbors + kids. It’s pretty fun to sneak away for a little fun in the sun before summer really gets rolling!

Aside from the instant sunshine, gorgeous palm trees and morning in the pool, I love myself a little change of scenery every once in a while. Who doesn’t love that?

As challenging as it can be traveling with the littles, its been amazing to take a break from our normal routine, and the unseasonably cold weather in Philly and enjoy some new experiences in the Florida sun.

As I’ve mentioned before, I’m currently doing my best to be a part of the Tone it Up plan for the summer – so I’ve been working out, eating right and generally feeling good. It’s a nice head space to be in going into Summer – and this gorgeous weather has me outside exercising every day!

And a little salty air never hurt anyone, either!

As you know, I’m a fan of dressing myself in something each day that makes me happy. I have been putting a little extra thought into my outfits and that 5 minutes of ‘me time’ in the morning makes all the difference to help me feel fabulous and put together all day {even when I don’t have anything together and haven’t showered in 3 days! Ha!}

But there’s a dry shampoo for that!

So I’m here to give a little love to the PrAna Lizbeth Skirt – which is pretty much the skirt I’ve been searching for. I have it in coal {comes in 2 other colors} – it’s made of soft hemp + recycled poly. This skirt has a little stretch to it, is quick drying and has odor reducing properties – I also love the two piece waistband and pleats!

Oh, and did I mention pockets – because pockets!

I paired this skirt with some fun summer sandals + a casual mint tank that I knotted on the side for a little extra somethin’ somethin’.

It’s really is a fabulous skirt for all summer long – I love the length and it has a cute little dip on the side hem too.

I’ve been totally bored with salads for lunch lately, so I thought this was a fun way to change things up while still getting in some good nutrients and protein!

I’m not much of a measurer but I combined about 1/2 cup of Stonyfield Organic yogurt, 1/2 cup baked chickpeas {I love the extra crunch!}, a few slices of celery {more crunch}, a few grape tomatoes {for a little color} and some avocado slices for a little extra creaminess.

Mix it all together, add it to some Ezekiel bread, toast or crackers and you are in for a light + refreshing {not to mention filling!} summer meal!

    You are so lucky to be in Florida cause this weather has been yucky this week! Love that skirt – it looks very comfortable too and lovely lunch!
