So I have had some amazing results on the Tone It Up plan this summer. I have been really happy with my results and want to continue on my journey to stay healthy and get even stronger! Part of the plan includes a solid workout plan and an equal part of getting results is nutrition.
I love the saying – ‘Abs are made in the gym and revealed in the kitchen’ because its true, right?
This summer I’ve cut out the majority of carbs out of my diet. It’s been good for me to make this change, and I’ve found I don’t really miss them because I’ve been able to make meals work for me without carbs!
Like these turkey + chickpea lettuce cups!
I have to admit, at first I was attempting to make a burger patty, but it sort of transitioned its way into a scramble and it totally worked! The turkey + chickpea combination was flavored perfectly, just like a burger – so this is a perfect recipe to make to swap out a traditional hamburger during this busy grilling season, but you get a leaner, healthier meal!
1 – In a bowl, combine 1/2 lb. lean ground turkey, 1/4 cup chickpeas, 1/4 cup egg whites, 1/2 tsp. garlic, salt and pepper to taste. Stir well to combine {I used a masher on the chickpeas!}
The Stonyfield greek yogurt gives is a cool, refreshing + creamy taste. And avocado along with fresh summer tomatoes are the perfect topping too. Plus the lettuce wrap gives the meal a nice little crunch!
This made enough for two servings + took about 5 minutes! So quick and easy to make, will definitely be enjoying this all summer long!
