My to-do list is a little out of control this week. It’s the last week of classes for me and I have back to back work everyday. It’s getting a little crazy!
Besides work and classes I want to wrap some gifts and put them under the tree, make my annual eye doctor appointment before the end of the year, get my bridal blogger post in for the week, clean our apartment up a bit, organize my guest posts for next week, cross a few wedding to-do’s off our ever growing list and pack!
Lots to do before we leave bright and early on Sunday morning!
How is your to-do list looking these days?
When I have lots to do on my little list and not so much time, I go back to my veggie loving roots for a meal!
A little Brussels sprouts and some chickpeas and we are in business!
I was the veggies and then let them sit in a bowl with olive oil and lemon juice.
Then, its time to get ROASTED!
I love my baked veggies a little crispy, so I leave them in the oven for a while.
I put them in at 400* for about 45 minutes or so – until they look roasted!
I love how they go in all green and pretty and come out with a crispy shell. I love the smoky flavor too!

With a side of ketchup for dipping. Standard.
I love the look of these veggies roasted. Especially the sprouts!
