avocado + eggs

 Today for breakfast I combined two of my favorite things.

Avocado & Eggs.

I wanted to make something new {to me}, something that would keep me fuller longer, something that was healthy and easy to make – this checked all those boxes.

It’s pretty simple – I hardboiled 2 eggs, mashed up an avocado & combined everything in a pretty little bowl. I also added in a bit of lemon juice {because, like I said the other day, lemon’s are amaze balls}, salt & pepper. egg and avocadoI put my avocado & egg mixture on top of an english muffin, added some strawberries on the side & you are good to go!

Easy to make, simple ingredients, nutritious & delicious! It was nice to switch things up a bit in the breakfast department, I like to try to find new ways to eat healthy whenever I can. I will definitely be making this again soon!

    I think you should add this recipe to the EB site. This would be great for lunch if you added some celery, onion, spices, etc.
