pioneer woman: chicken pot pie

The other night I made a meal that I was so proud of – I truly impressed myself with how it turned out, I couldn’t wait to share it with you!

It all started when I was browsing through some of my favorite cookbooks {side note – never do this when you are hungry!} I was trying to figure out what I wanted to make Charles & I for dinner. I noted a few things I was interested in created & gave Charles the final choice. He went rouge from my previously approved picks and said he was in the mood for chicken pot pie.

Something I’ve never made before. Something that required making the perfect pie crust from scratch. Something that, to be honest, looked a little bit intimidating to me – not sure why, but it did!

I decided to put on my big girl pants & make something new in the kitchen for me & my man!

I would like to put a little disclaimer out there – this was not the most glamorous thing to photograph, by any means. So you will just have to trust me in the fact that it tasted much better than it looked – I promise! 🙂

1. It all starts out with making the perfect pie crust – or you can buy one at the store. But if you buy one, I promise you won’t get the same amount of accomplishment as making it!

2. Next preheat the oven to 400*F

3. Then start slicing up the veggies – 2 celery stalks, 3 carrots & 1 onion – the smaller the better in my opinion!

4. Next melt 1/2 stick of butter in a large pot over medium heat – add the veggies & sauté a few minutes

5. Add 2 cups of cooked, shredded chicken. Sprinkle 1/4 cup flour, stir to combine

6. Pour in 2 cups of chicken broth, 1 chicken bouillon cube and 1/4 cup white wine – this should then turn into a tasty gravy

7. Pour in 1 cup of heavy cream, allow it to thicken for about 4 minutes. Season with 1 tsp of thyme & salt along with black pepper to taste.

8. Add chicken mixture into a casserole dish. Top with the perfect pie crust.

9. Bake for 30 minutes until the crust is golden. Cool for 10 minutes.

10. Serve & Enjoy!
